chickin masala
๐ Chicken Masala (North-Indian Style)
Ingredients
For the chicken:

500g chicken (bone-in or boneless)

2 tbsp oil or ghee
-
2 medium onions (finely chopped)
-
2 tomatoes (pureed or finely chopped)
-
1 tbsp ginger-garlic paste
-
1–1.5 tsp red chilli powder
-
1 tsp turmeric
-
2 tsp coriander powder
-
1 tsp garam masala
-
1 tsp cumin seeds
-
1 bay leaf
-
Salt to taste
-
Fresh coriander (for garnish)
Optional (for richer flavor):
-
2 tbsp yogurt or ¼ cup cream
Instructions

Heat oil in a pan. Add cumin seeds and bay leaf.

Add onions and sautรฉ until golden brown.

Stir in ginger-garlic paste and cook for 1 minute.

Add tomatoes, cook until soft and the oil separates.
-
Add spices: turmeric, red chilli, coriander powder, salt.
-
Cook the masala for 2–3 minutes to deepen the flavor.

Add chicken pieces, mix well, and cook for 5 minutes.

Add ½–1 cup water, cover, and simmer for ~15–20 minutes (until chicken is cooked).

Stir in garam masala and optional yogurt/cream. Cook 2 more minutes.

Garnish with fresh coriander and serve hot.
