๐Ÿ› Chicken Masala (North-Indian Style)

Ingredients

For the chicken:

  • 500g chicken (bone-in or boneless)

  • 2 tbsp oil or ghee

  • 2 medium onions (finely chopped)

  • 2 tomatoes (pureed or finely chopped)

  • 1 tbsp ginger-garlic paste

  • 1–1.5 tsp red chilli powder

  • 1 tsp turmeric

  • 2 tsp coriander powder

  • 1 tsp garam masala

  • 1 tsp cumin seeds

  • 1 bay leaf

  • Salt to taste

  • Fresh coriander (for garnish)

Optional (for richer flavor):

  • 2 tbsp yogurt or ¼ cup cream


Instructions

  1. Heat oil in a pan. Add cumin seeds and bay leaf.

  2. Add onions and sautรฉ until golden brown.

  3. Stir in ginger-garlic paste and cook for 1 minute.

  4. Add tomatoes, cook until soft and the oil separates.

  5. Add spices: turmeric, red chilli, coriander powder, salt.

  6. Cook the masala for 2–3 minutes to deepen the flavor.

  7. Add chicken pieces, mix well, and cook for 5 minutes.

  8. Add ½–1 cup water, cover, and simmer for ~15–20 minutes (until chicken is cooked).

  9. Stir in garam masala and optional yogurt/cream. Cook 2 more minutes.

  10. Garnish with fresh coriander and serve hot.

  • Roti / Naan

  • Steamed Rice

  • Jeera Rice
